Our Tenderloin Steak is the cut people reach for when they want maximum tenderness and a clean, mild beef flavor. Cut from the tenderloin (the psoas major along the backbone), it’s known as the most tender muscle on the animal—and because there’s only a small amount of it per steer, it’s a true premium selection. Each package is about 1 lb. total and includes 2–4 steaks depending on the size of each cut. Our cattle are island raised on Oahu, and while we are not grass-fed certified, our animals are raised on a grass-based diet and finished accordingly.

How to Cook:

  • Season simply: Salt + pepper is enough; add butter, garlic, and herbs at the end if you want a richer finish.
