An 8 oz lip-on ribeye steak of 100% raised by the Griffith ʻohana beef, raised on O'ahu by the Griffith family. The ribeye is the most marbled, most flavorful steak cut on the animal, and the lip-on cut means you get the spinalis (rib cap) still attached. That cap is widely considered the single best-tasting piece of beef on the entire animal. This is a steak lover's steak.

How to Cook:

  • Cast Iron: Ripping hot, 3-4 minutes per side. Baste with butter, garlic, and rosemary.
  • Grill: Medium-high heat, 3-4 minutes per side. Watch for flare-ups from the marbling.
  • Reverse Sear: Low oven (250°F) until 115°F internal, then sear on cast iron or grill for the perfect crust.
  • Rest It: 5 minutes minimum after cooking. The juices redistribute and the steak gets even better.
