It rewards patience with tender, deeply flavorful meat that falls apart at the touch of a fork. Whether you're smoking it all day or braising it in the oven, this is the cut that turns time into flavor.

  • Oven Low & Slow: Season generously, wrap in foil, cook at 275°F for 4-5 hours. Rest 30 minutes before slicing.
